In conventional cacao powder products, the raw cacao bean materials are heated to uncontrolled average temperatures as high as 300°F. Unfortunately, this high temperatures destroy most of cacao's original antioxidants by changing the natural chemical structure of cacao powder.

Bondado Cacao Powder is created by making organic cacao beans into a pressed cake separating the oil from the protein and fiber. A high-accuracy thermometer monitors the process, so that the temperature is not allowed to exceed 120° F. Our average processing temperature is controlled at about 104° F.

Our remaining cacao dry cake-like material, with optimal pH at about 5.3, is then gently milled into powder, so that only the most bioavailable fineness of 75 μm becomes our final product This allows for maximum digestion and highly assimilable antioxidant absorption.

Physical Property of Organic Cacao Powder


The natural raw form of organic cacao powder has a light brown color and extractable pH of 5.0 to 5.5. The processed organic cacao powder known as "alkalized", "dutch-process" and "unsweetened cocoa powder” is darker in color, ranging from brownish red to nearly black, with a pH from 6 to 8.


Cocoa solids are a mixture of many substances remaining after cocoa butter is extracted from cacao beans. When sold as an end product, it may also be called cocoa powder or cocoa.

Cacao powder is formed from cacao mass. Presses are used to remove some of the fat and leave a solid material called cacao press cake. These cakes are then milled to form cacao powder.
